Caldo Verde, try making this traditional Portuguese Soup made with Aloha Links Portuguese Sausage, Kale, Potatoes, Onions and a little bit of time. Perfect for any time of year but especially good on those cold and rainy days, serve this soup with a couple slices of toasted baguette and ENJOY!!!



Ingredients

4 peeled and thinly sliced russet potatoes

1 medium onion

1 pound thinly sliced kale

6 cups chicken broth or water

1/2 tablespoon salt


Step 1

Begin by slicing two links of sausage into 1/4 inch thick slices and place them into a large pot. Place the pot on medium-high heat and brown for 10 minutes stirring occasionally to prevent burning. While sausage browns, dice the onion after 10 minutes toss in onions and brown till translucent.









Step 2

Next, add in the sliced potatoes and the 6 cups of chicken broth along with the salt. Stir to combine and let pot come to a boil, once the soup is boiling lower the heat cover and simmer for 45 minutes. Stir the soup periodically to prevent burning and to help the potatoes to breakdown, the softened potatoes will slowly breakdown and thicken the broth.











Step 3

Add in the kale one hand full at a time to help all of it fit in the pot and let soup cook for another 35-45 minutes, the longer the soup boils the softer the kale will become and the more you stir the thicker and smoother the broth will get. Once the desired consistency and texture are achieved shut of heat and let stand for 15 minutes. Serve with two slices of toasted baguette and ENJOY!!!
